I used a little butter & more olive oil, doubled the garlic, skipped the salt, I find parm cheese is salty enough. Used seasoned panko breadcrumbs & can’t wait to make it again, this time will use 2 heads of cauliflower

Ingredients

  • 1/4 cup agave (honey or maple syrup are also OK to use)
  • 1/2 teaspoon pure vanilla extract
  • 2 cups nonfat plain yogurt
  • 1/4 teaspoon fresh lemon juice
  • raspberries
  • chopped pecans, for garnish
  • blueberries
  • pinch salt
  • strawberries, sliced

Instructions


  1. First, Line a baking sheet with wax paper and set aside.
  2. Then, In a large mixing bowl combine yogurt, agave, vanilla, lemon juice, and salt; whisk until thoroughly combined.
  3. Transfer yogurt mixture to previously prepared baking sheet and spread it around to an even thickness. 
  4. Top with berries.
  5. Garnish with nuts (optional)
  6. Freeze for 2 to 3 hours, or until firm.
  7. Cut into pieces and serve.
